Directions for Jars:
Wash and rinse jars and lids in HOT water. Do not dry. Place jars and lids (no plastic lids or jars) in pan of boiling water. Let jars stand in boiling water, turning so all sides are sterilized for 1-2 minutes. Take jars and lids out of water using tongs and place on cookie sheet. Do not dry or touch jars.
Directions for Jelly:
Measure juice and pour into a medium pan on HIGH heat. Stir juice until it boils. Add sugar and stir constantly until a second boil appears. Add the liquid CERTO and stir constantly until third boil. The third boil will be a rolling boil, time this boil for one minute. Remove from heat immediately. Skim off all of the white “skin” that forms after the rolling boil subsides. Pour skimmed jelly into a large measuring cup with a pour spout. Then pour jelly into sterilized jars.
Refrigerate immediately OR top with 1/8 inch of melted paraffin wax to seal and preserve.
